Refreshing version of Salad Caprese

In occasion of the heatwave I have decided to dust off this recipe, I wrote for Cosmobloggers last year. It’s pretty simple recipe for a great summer dinner.

You know me, I like to enhance things so I did my magic with the classic recipe.

It’s nothing hard and I find the recipe maybe way too simple, but I found out that there are few around me that don’t know how to cut a slice of bread pretty much. So it makes sense. Maybe even my husband-to-be will surprise me one day.

Oh, and I forgot to mention. Don’t take these amounts so seriously, as this recipe is not such a rigorous chemistry and just add as much as you feel like. It’s just a guideline.

Ingredients

  • 250g of cherry tomatoes, even different kinds

  • 1 pack of Mozzarella cheese (ideally cherry mozzarella, but again, up to you)

  • 1 palm of basil leaves

  • 1 organic lemon

  • extra virgin olive oil (amount based on your diet or taste)

  • salt (the flaked fancy one is great for this, but normal will do)

  • fresh pepper in a mill (never ever buy the grinded one as it oxidizes and affects livers)

Preparation

  1. Wash the ingredients properly. Then cut the tomatoes in half, if you’re in a rush, I have a time-saving hack for you. If you’re in a mood, the tomatoes look really neat when they are quartered.

  2. Take part of the basil leaves and pound them in the mortar with salt and oil. The basil will flavor the oil nicely.

  3. Take out the mozzarella cheese and pull it apart by hand (for a rustic look). If you have cherry mozzarella, simply cut it and spread over the tomatoes.

  4. Tear the rest of the basil leaves with your hand, or cut it. And sprinkle all over your salad.

  5. now it’s time for the basil infused oil. Carefully drizzle the oil and leaves over the tomatoes and mozzarella.

  6. For the finishing touch, grind lemon zest and if you want the salad to be extra fresh, squeeze some juice on it.

  7. for the final step just sprinkle a little bit of salt and pepper to your taste and serve. Ideally, with some fresh baguette.

French Baguettes

You might not know this about me but one of my hobbies is bread baking. I've learned that because I love good quality food, that is unprocessed and dyed but trulls how it should be. 

 According to me, everyone should learn this skill because it's great mind and nerves balm. You will give the dough all the energy and it will reward you with great flavour and taste of a warm bread. And the taste is so rich you can eat the bread simply with butter and wil get more pleasure than from the most expensive steak. You might not get all the protein but I believe that eating carbs in moderation, it's a great addition to your menu. It's all about wide range. 

And so because I wished and got bread maker machine for Christmas, I bake my own bread on a regular basis and I don't even remember the last time I bought bread in the store. But in the morning I get to wake up to that amazing smell. 

I have been using one recipe for quite awhile now, but I have decided to change it a bit and the result was way better and everyone who tried it loves it. And now I will share my recipe with you.  

Rye-wheat French baguettes

  • 240g whole purpose wheat flour
  • 100g rye flour
  • pinch of salt
  • 250ml warm water
  • 1/2 cube active yeast (1 1/2 tsp dry yeast)
  • 1 t bsp golden syrup or honey (you can use agave or maple syrup as well)
  • little bit of corn flour

By hand

In a big bowl mix both flours and salt, next to it, in a small bowl, mix warm water, sugar and yeast to make leaven. Let it rest on a warm place until foam forms or you can see sparkles on the water - it will take aprox. 10 minutes. Pour the leaver into the flour and start mixing together first by spatula second by hand to form even smooth ball. Cover the bowl with clean cloth and put to warm place to rise. Aften one hour, put the dough on a clean table covered with a little bit of cormeal and work it again. Divide to 4 pieces and form small rolls thick as you preffer to serve them later on, but keep in mind that they will rise again, mostly to the sides. Cover baking tray with a baking sheet and put your rolls on it, cover again and leave it 30 - 60 minutes to rise again. Heat up the oven to 200°C. Then put your baguettes into the oven and bake for 10 minutes and lower the temperature to 180°C and bake 20 - 30 minutes according to the thickness. 

Preparation in a bread maker

Pour water to the bowl along with syrup, cover with all the dry ingredients and sprinkle yeast on top. In your menu choose option for dough and the bread maker will take care of it all. It will do the mixing and rising. Take out the risen dough and put it on the table and work as written above. If your bread maker has a set for baguettes, use it. If not, continue as written above. but if you do, put the set into the bread maker and choose option for baking, set 45 minutes and that's it.

Amazing infused waters for hot summer days

 I am addicted to infusing my water with something yummy to give it a little flavour kick. It is very simple way how to create healthier drink than just having a soda or pouring some sugary syrup with lots of preservatives into a glass every time you are thirsty. 

 The most popular infused water is the well known lemon in your glass or sliced cucumber. Recently I have also seen people drinking water with strawberry or other fruits, but did you know you can also infuse your water with some herbs and even flowers? Trust me on this one, it's definitely worth a try. 

Here are few drinks that I made while I was out at the countryside: 

Rose & Lavender Water

 Roses are definitely my favourite flavour in drinks! Just get some blooming roses and lavender, add it to your water and let sit in the fridge for some time. Then you can enjoy this royal spa water.

Mint & Red Currant Water

 Red Currant is quite sour which means it's very refreshing especially if you combine it with mint. Just crush a hand full of those berries and add some mint leaves that you have squished in your hand just to help with the flavour release. Cool it down a little and enjoy the nice kick. 

Melissa & Mint Water

 You can work with any herb plant you want so you have nice space for experimenting on the flavours. I love mint and melissa because it has this lemon-ish aroma that I really love. Always just work those leaves with your hand to release the aroma. 

 I will surely post some another tips on flavours for this drink but go ahead and don't be shy to experiment with these. If you add some fruit you like, you basically cannot go wrong. And i guarantee you will soon forget about those artificial flavoured drinks!
